Thanksgiving Cinnamon Roasted Sweet Potatoes

Sweet Potatoes are commonly found in many holiday meals, especially at Thanksgiving. We have so much to be thankful for this holiday season including our loved ones, good health and delicious cinnamon spice!

This savory sweet potato recipe will definitely have your family and friends asking for more. Sweet potatoes are highly nutritious and a great source of fiber, minerals and vitamins. Sweet potatoes are rich in beta-carotene, an important antioxidant and also may have cancer fighting properties. One of our favorite holiday spices Cinnamon has many health benefits as well. Cinnamon is known to have anti-inflammatory properties that may help to reduce blood sugar levels and may help lower the risk of common diabetes.  This simple and scrumptious recipe makes the home smell amazing and fills the belly with wholesome goodness.

Spices – For this holiday favorite you will need cinnamon and to help balance the flavor; a small amount of pepper and salt.

INGREDIENTS
2 large sweet potatoes (peeled and cut into 1 inch squares)
1 teaspoon cinnamon
2 tablespoons of honey
2 tablespoons of olive oil
1/4 teaspoon of pepper
1/2 teaspoon of salt

PREPARE
Preheat the oven to 375 degrees
Wash, peel and chop the sweet potatoes into 1 inch cubes (some grocery stores offer pre-cut sweet potatoes if you are short on time)
In a large bowl, combine the cinnamon, honey, olive oil, salt, and pepper. Next add the sweet potatoes to the bowl to toss and coat.
Pour the sweet potatoes onto a large baking sheet. Spread them out evenly to roast.
Cook in the oven for 25-30 minutes, stirring halfway through.
